Ingredients

  • 250 g Flour
  • 85 g Sugar
  • 1 Teaspoon Baking Powder
  • 65 g Butter or Vegan Full-Fat Margarine
  • 3 Medium-Sized Apples
  • 2 Large Organic Eggs
  • 125 g Whipped Cream or Vegan Cream
  • 65 g Soy or Vegan Yogurt
  • 65 g Brown Sugar
  • 1 Shot Café Royal Espresso
  • 1 Pinch of Salt

Which Apples Work Best?

Sour apples like Elstar, Boskop, or Jonagold bring the best flavor. Serve with whipped cream, vanilla sauce, or ice cream for an indulgent finish. Add texture by replacing half the flour with oat flakes or serve it stylishly in small heat-resistant glass bowls.

Vegan Option

• Replace butter with full-fat vegetable margarine.
• Use chia or linseed as an egg substitute: mix 1 tablespoon seeds with 3 tablespoons water and let it swell.

PREPARATION

  • Preheat the oven to 175°C and grease the baking pan
  • Mix the flour, sugar, and baking powder. Add butter and a shot of coffee, then mix with a hand mixer
  • Press ¾ of the dough into the springform pan lightly
  • Cut the apples into thin slices and layer them on the dough. Sprinkle the remaining dough over the apples
  • Bake for 20 minutes. Meanwhile, mix the eggs, cream, yogurt, brown sugar, and a pinch of salt
  • Remove the cake, spread the egg mixture over it, and bake for another 20 minutes
  • For the crumbles, mix flour, sugar, cinnamon, and salt. Add melted butter and knead into crumbs
  • Take the cake out, sprinkle the crumbles on top, and bake for the final 20 minutes
  • Let it cool for 10–15 minutes or serve it warm
